Whether you are celebrating the 1st of July or 4th of July, this is an absolutely fabulous dessert to take to your BBQ, picnic or gathering. It’s a very easy dessert to make and is always a favorite… you won’t have any left-overs with this one.

Directions:

Yield: One 9″ x 13″ pan

  1. Mix the first three ingredients together with a pastry blender until thoroughly combined.
  2. Press mixture into the bottom of an ungreased 9”x13” baking pan.
  3. Bake on center rack of a preheated 400°F oven for 10–15 minutes or until lightly browned. Remove from oven and cool completely.
  4. Blend the cream cheese, milk and icing sugar together until smooth.
  5. Spread on the cooled crust and refrigerate.
  6. Make lemon pie filling and cool completely.
  7. Spread the cooled lemon pie filling over first two layers.
  8. Whip cream and spread evenly over the lemon pie filling layer.
  9. Sprinkle with crushed nuts if desired. Store refrigerated until ready to serve.

To serve: cut into squares of desired size and enjoy!!

Ingredients:

  • 1 cup of All-purpose Flour
  • 1/2 cup of Butter, softened to room temperature
  • 1/2 cup of Finely Chopped Nuts (walnuts, pecans, almonds, etc.)
  • 250g of Cream Cheese, softened to room temperature
  • 3 tbsps of Milk
  • 1 cup of Confectioner’s (Icing) Sugar
  • 3 cups of Lemon Pie Filling, cooked and cooled completely (recipe here)
  • 3-4 cups of Whipped Cream (recipe here)
