This is another one of those “quick, make ahead and pop in the oven” meals. This is a really nice recipe. I always enjoy it because I can quickly prepare everything the night before, wrap it and store in the refrigerator. Then simply pop it in the oven when I get home from work.

Directions:

Yield: 6 servings

  1. Place chicken in a casserole dish or large roasting pan sprayed with Pam.
  2. Sprinkle with seasoning.
  3. Cover and bake at 375°F for 45 minutes.
  4. Remove from oven and add the remaining ingredients.
  5. Cover and return to the oven for approx 30 minutes or until sausage and chicken are cooked through.

Ingredients:

  • 2 and 1/2 to 3 lbs of Cut up Chicken
  • 1 lb of Smoked Sausage, cut into 1 inch pieces
  • 1 lb of Unpeeled, scrubbed Baby Potatoes
  • 4 Medium Sweet Peppers, cut into slices (Any color or combination of colors)
  • 4 Medium Onions, quartered
  • Salt, Pepper, Poultry Seasoning and Parsley, to taste
