This is the easiest salad ever and so delicious. It’s always well received for any occasion at any time of year. I love to take this to work for my lunch.

Directions:

Yield: A large bowl

  1. Cook the pasta to the package instructions. Drain and set in the fridge to cool.
  2. While the pasta is cooling, slice the cucumber, red onion, peppers and olives.
  3. Combine all of the pasta, vegetables, olives and cheese and mix together.
  4. Once all the ingredients are mixed together, simply add the Greek dressing. If you would like to make your own, I have a great recipe for Greek dressing here. Otherwise, Kraft makes some great tasting salad dressings including a Greek with Feta. Often times I will use Renee’s Mediterranean Greek Vinaigrette. It is actually quite comparable to my own homemade Greek dressing.

  • 375g package of Fusilli Pasta
  • 1 large Cucumber
  • 1/4 of a large Red Onion
  • 1 of each – Red, Green and Yellow Bell Peppers
  • 1/2 cup of Kalamata Olives
  • 250g package of Feta Cheese
  • 2 cups of Greek Dressing
