Spring has arrived and Potato Salad is a great accompaniment to anything you may toss on the BBQ. I get a lot of requests for this recipe. It is always a favourite at any gathering.

I believe it is the addition of the bacon bits and the use of new potatoes which makes mine stand out from the rest.

Potato Salad is one of the simplest things to make and is always very popular as a side dish, regardless of the occasion. I have not added amounts to use in this recipe because it is one of those recipes that can easily be adjusted to any size. There are no hard and fast rules to how many boiled eggs, potatoes or diced onion you will add. You be the judge.

Directions:

Yield: As much as preferred

  1. Boil or steam potatoes (peeled or unpeeled) until tender and easily pierced with a fork. Drain and let cool (do not rinse in cold water).
  2. Boil eggs for 8 minutes, immerse in cold water immediately and cool down as quickly as possible. I always cook my potatoes and eggs the day before or early in the morning the day of. They are much easier to handle, if they have sat in the refrigerator and cooled thoroughly.
  3. In a large bowl, peel and cut up potatoes and eggs into your preferred size. Add bacon bits, onions and miracle whip. Stir and season to taste.

Ingredients:

  • To taste, Boiled or Steamed Potatoes (New, Red, Yellow, etc.)
  • To taste, Hard Boiled Eggs
  • To taste, Chives, Onions, Shallots, or Green Onion
  • To taste, Real Bacon Bits
  • To taste, Kraft Miracle Whip (or salad dressing of your choice)
  • To taste, Salt, Pepper, Parsley & Paprika
