It&#8217;s so darn good and incredibly versatile. You can eat it warm as a dessert with maple syrup or as an accompaniment to tacos or any Mexican style dish.<!--more--><\/p>\n<p>It&#8217;s also great just plain or with butter for a snack or accompanying any meal. Try it in the lunch box for a change with an apple and a couple slices of your favorite cheese.<\/p>\n<h2>Directions:<\/h2>\n<p><span class=\"yield\">Yield: One 8 or 9&#8243; square pan<\/span><\/p>\n<ol>\n<li>Spray pan with cooking spray or lightly grease with shortening &#038; set aside.<\/li>\n<li>Preheat Oven to 350&deg;F.<\/li>\n<li>Combine cornmeal with 1\/2 cup milk in a small bowl and set aside.<\/li>\n<li>Measure out and combine dry ingredients in a small bowl and set aside.<\/li>\n<li>Cream shortening &#038; sugar in medium mixing bowl until light and fluffy.<\/li>\n<li>Add egg and mix well.<\/li>\n<li>Add dry ingredients alternately with the milk. Starting with the dry and making three dry additions and two liquid additions.<\/li>\n<li>Add cornmeal mixture and blend together.<\/li>\n<li>Pour into prepared pan and bake on center rack of preheated oven for 30 to 60 minutes or until cake is golden and springs back when lightly touched.<\/li>\n<li>Cool for 5 minutes before removing from the pan.<\/li>\n<li>Serve warm with maple syrup or butter.<\/li>\n<\/ol>\n<\/div>\n<div class=\"ingredients\">\n<h2>Ingredients:<\/h2>\n<ul class=\"ingredients-list\">\n<li class=\"ingredients-list-alt\">1 cup of Cornmeal<\/li>\n<li>1\/2 cup of Milk<\/li>\n<li class=\"ingredients-list-alt\">1 tsp of Salt<\/li>\n<li>1 and 1\/4 cups of All-purpose Flour<\/li>\n<li class=\"ingredients-list-alt\">2 and 1\/2 tsp of Baking Powder<\/li>\n<li>1\/2 cup of Sugar<\/li>\n<li class=\"ingredients-list-alt\">1 large Egg<\/li>\n<li>1 cup of Milk<\/li>\n<li class=\"ingredients-list-alt\">1\/2 cup of Shortening<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div class=\"related-video\">\n<div class=\"video\">\n<iframe loading=\"lazy\" class=\"video-border\" width=\"560\" height=\"349\" src=\"http:\/\/www.youtube.com\/embed\/d5F3c59702A\" frameborder=\"0\" allowfullscreen><\/iframe><\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Corn Bread or Johnny Cake, as my Grandmother used to call it, is one of my favorite things.
