They are quick and easy to make and taste so good.<!--more--> Try sandwiching two baked and cooled cookies together with jam in the middle for an added treat.<\/p>\n<h2>Directions:<\/h2>\n<p><span class=\"yield\">Yield: 5-6 dozen<\/span><\/p>\n<ol>\n<li>In a bowl, cream together peanut butter and mashed potatoes until smooth.<\/li>\n<li>Beat in sugar until fluffy. Beat in eggs.<\/li>\n<li>Combine flour, cornstarch, xanthan gum, baking soda, and add to batter. Mix well. Stir in vanilla and nuts.<\/li>\n<li>Place in refrigerator for 20 \u2013 45 minutes until batter firms enough to handle.<\/li>\n<li>With hands, gently roll batter into round balls (1 teaspoon sized). Place on parchment lined baking sheet about 2 1\/2 inches apart. Flatten cookies with a fork dipped in sugar.<\/li>\n<li>Bake in preheated 375&deg;F oven for 15-20 minutes until golden brown around the edges for a softer cookie. If you like your cookies on the crispy side, leave them in the oven until they are completely golden brown.<\/li>\n<li>Store in an airtight container. I usually keep mine in the freezer and take out a half dozen or as many as we need at a time.<\/li>\n<\/ol>\n<\/div>\n<div class=\"ingredients\">\n<h2>Ingredients:<\/h2>\n<ul class=\"ingredients-list\">\n<li class=\"ingredients-list-alt\">1 and 1\/2 cups of Peanut Butter<\/li>\n<li>1 and 1\/2 cups of Mashed Potato<\/li>\n<li class=\"ingredients-list-alt\">1 and 1\/2 cups of Sugar<\/li>\n<li>2 large Eggs<\/li>\n<li class=\"ingredients-list-alt\">1 cup of Wheat\/Gluten Free All-purpose Flour<\/li>\n<li>1\/2 cup of Cornstarch<\/li>\n<li class=\"ingredients-list-alt\">2 tsp of Baking Soda<\/li>\n<li>1 tsp of Xanthan Gum<\/li>\n<li class=\"ingredients-list-alt\">1 tsp of Vanilla<\/li>\n<li>1\/2 cup of Chopped Nuts or Sunflower Seeds<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div class=\"related-video\">\n<div class=\"video\">\n<iframe loading=\"lazy\" class=\"video-border\" width=\"480\" height=\"360\" src=\"http:\/\/www.youtube.com\/embed\/VNCj7FciEz4\" frameborder=\"0\" allowfullscreen><\/iframe><\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Whether you have an intolerance to wheat and gluten or not, you are really going to enjoy these cookies.
