It is spectacular! People always ask &#8220;What&#8217;s the surprise?&#8221; and I always answer, &#8220;It doesn&#8217;t have any carrots.&#8221;<!--more--> Then I crack up laughing.<\/p>\n<p>That really isn&#8217;t the surprise at all. Traditionally, people make carrot cake frosted with a cream cheese icing, but not me. I make a cream cheese filling, which I bake inside of my carrot cake. It&#8217;s a nice surprise. Most of the time I frost my finished cake with regular <a href=\"http:\/\/www.cookingwithcandra.com\/blog\/2009\/10\/16\/homemade-butter-cream-icing\/\" title=\"Homemade Butter Cream Icing\" target=\"_blank\">butter cream<\/a> and sprinkle it with toasted coconut flakes, but sometimes, I just dust each slice with icing sugar. It&#8217;s also tasty eaten plain. The choice is yours.<\/p>\n<h2>Directions:<\/h2>\n<p><span class=\"yield\">Yield: One bundt cake (10-12 servings)<\/span><\/p>\n<ol>\n<li>Please watch video for procedures and baking instructions.<\/li>\n<li>Leave cake in pan for about ten minutes after you take it from the oven, then remove from pan and cool completely on a wire rack. Frost as desired. Enjoy!<\/li>\n<\/ol>\n<\/div>\n<div class=\"ingredients\">\n<h2>Ingredients (Cake Batter):<\/h2>\n<ul class=\"ingredients-list\">\n<li class=\"ingredients-list-alt\">3 cups of Grated Carrots<\/li>\n<li>2 cups of All-purpose Flour<\/li>\n<li class=\"ingredients-list-alt\">1 and 3\/4 cups of Sugar<\/li>\n<li>2 tsps of Baking Soda<\/li>\n<li class=\"ingredients-list-alt\">1 tsp of Salt<\/li>\n<li>2 tsps of Ground Cinnamon<\/li>\n<li class=\"ingredients-list-alt\">1 cup of Vegetable Oil<\/li>\n<li>3 large Eggs, beaten<\/li>\n<li class=\"ingredients-list-alt\">1\/2 cup of Raisins (optional)<\/li>\n<li>1\/2 cup of Chopped Pecans or Walnuts (optional)<\/li>\n<\/ul>\n<h2>Ingredients (Cream Cheese Filling):<\/h2>\n<ul class=\"ingredients-list\">\n<li class=\"ingredients-list-alt\">250 gram pkg. of Cream Cheese, softened to room temperature<\/li>\n<li>1\/4 cup of Sugar<\/li>\n<li class=\"ingredients-list-alt\">1 large Egg, beaten<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div class=\"related-video\">\n<div class=\"video\">\n<iframe loading=\"lazy\" class=\"video-border\" width=\"480\" height=\"360\" src=\"http:\/\/www.youtube.com\/embed\/Xn0nRwvVkX4\" frameborder=\"0\" allowfullscreen><\/iframe><\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>This is my most requested cake and once you make it and taste it, you will know why.
