It is great for a pot luck, as an appetizer, a lunch, or supper.<!--more--> It&#8217;s also great for basically any occasion; large, small, upscale or everyday!<\/p>\n<p>It&#8217;s quite easy to make and you can easily vary the ingredients to suit a persons dietary requirements. Go ahead and give it a try!<\/p>\n<h2>Directions:<\/h2>\n<p><span class=\"yield\">Yield: 4-6 servings<\/span><\/p>\n<ol>\n<li>If you are using potatoes in your chowder, peel, cube and cook them until just tender, approximately 15 minutes. Set aside.<\/li>\n<li>Melt the butter in a large saucepan or dutch oven over medium heat. Add the onion and lightly saute in the butter until the onion is translucent. Make sure to continue stirring. You don&#8217;t want to brown the onions.<\/li>\n<li>Lay the fish fillets on top of the onions. Turn the heat down to low. Cover the dutch oven and let the haddock sweat for 3-5 minutes.<\/li>\n<li>Add the parsley, tarragon, salt and pepper. You can use white pepper in your chowder instead of black. This will make for a better presentation when the chowder is finished.<\/li>\n<li>Add only enough water or stock to barely cover the fish.<\/li>\n<li>Add the potatoes, cover and allow the chowder to heat through. This will take approximately 5 minutes.<\/li>\n<li>Warm the cream and add to the chowder. Stir gently to combine, being careful not to break up the fish.<\/li>\n<\/ol>\n<p>This recipe is easy to scale. The amount above will make enough for about 4-6 servings, but if you are making it for a large function, just add more ingredients in proportion. Enjoy!<\/p>\n<\/div>\n<div class=\"ingredients\">\n<h2>Ingredients:<\/h2>\n<ul class=\"ingredients-list\">\n<li class=\"ingredients-list-alt\">2 tbsps of Butter<\/li>\n<li>1 medium Onion, diced<\/li>\n<li class=\"ingredients-list-alt\">2 lbs of Haddock Fillets, boneless (or other choice of fish; cod, sole, halibut, bass, shark, etc.)<\/li>\n<li>1 tbsp of Parsley<\/li>\n<li class=\"ingredients-list-alt\">Tarragon, to taste (optional)<\/li>\n<li>Salt and Pepper, to taste<\/li>\n<li class=\"ingredients-list-alt\">2-3 cups of Water or Stock (chicken, fish or vegetable)<\/li>\n<li>2 medium Potatoes, cubed (optional)<\/li>\n<li class=\"ingredients-list-alt\">2 cups of Cream (whipping cream or blend)<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div class=\"related-video\">\n<div class=\"video\">\n<iframe loading=\"lazy\" class=\"video-border\" width=\"560\" height=\"315\" src=\"http:\/\/www.youtube.com\/embed\/tFmadhyUZns\" frameborder=\"0\" allowfullscreen><\/iframe><\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Haddock Chowder, or any kind of chowder in my opinion, is such a hearty soup that it makes a fabulous meal!
