If your looking for a quick and easy sponge cake recipe, this is the one for you! It has only four simple ingredients and makes a really delicious cake!

Directions:

Yield: 1 Sponge Cake

  1. Place the eggs and sugar in a stainless steel mixing bowl. Place the bowl onto the stove at very low heat. We are going to whisk the mixture. We want to warm the mixture slightly so that it will mix better on our stand mixer. You don’t want to cook the eggs, so make sure the heat is just enough to warm the eggs. Ideally you want the mixture to be lukewarm, which is about the temperature of your skin. You can test by sticking a clean finger into the mixture. It shouldn’t feel hot or cold to the touch.
  2. Move the bowl over to the stand mixer with the whisk attachment. Whisk on a high speed until the mixture gets very thick. It will start to form soft peaks.
  3. Prepare a 10″ spring form pan by lightly greasing the pan and then dust with flour.
  4. Fold in the sifted flour until it has been completely incorporated.
  5. Melt the butter and then let it cool to room temperature. Gently fold the butter into the batter.
  6. Pour the batter into the spring form pan that we prepared earlier.
  7. Preheat the oven to 350°F. Bake on the center rack for approximately 25-30 minutes. The cake will be golden brown on top and spring back when lightly touched. Be sure to immediately remove the edge of the spring-form pan as soon as the cake comes out of the oven.
  8. Decorating the cake is completely up to you and is only limited by your imagination. I cut my cake into three layers and filled it with strawberries and whip cream (try my whip cream recipe). Watch the video below to get more details about decorating your sponge cake.

    Hi Candra
    Can you help me? I do catering the one thing that gives me trouble are cakes I even tried boxmixes. my problem is when the cakes are done the sides don’t raise much and the center of the cake comes to a peak.I preheat my oven etc!! what am I doing wrong Please Help !!…. I just love your recipes.
