As you all know, the smell of fresh baked bread is one of my favorite things. This is a quick and easy way to make delicious homemade dinner rolls. Just use your stand mixer and eliminate the kneading process.

Directions:

Yield: 2 dozen rolls

  1. Put 4 cups of the flour and the quick-rise instant yeast into the bowl of your stand mixer. Use the paddle attachment to blend on low speed for a couple of seconds.
  2. Add the shortening, honey, egg and water to the flour mixture and combine using the stand mixer. You can replace the shortening with butter or oil and the honey with sugar if you like. Ingredients can build up on the side of your bowl so be sure to stop the mixer and scrape the sides of your bowl until the ingredients are well combined.
  3. Remove the paddle attachment and add the dough hook. Add an additional cup of all-purpose flour and mix on low speed until well combined. Again, the ingredients can stick to the side of the bowl, so be sure to scrape down the sides.
  4. Add an additional 1/2 cup of flour and continue mixing on low speed. You may add additional flour, as required, to prevent the dough from sticking to the sides. Add the salt and mix until the dough forms into a nice ball on the hook and stops sticking to the sides.
  5. Run the mixer for 7-8 minutes with the dough hook attachment. This will knead the dough for you. Add flour as needed.
  6. Optional – knead the dough by hand. I have made bread for years and it is hard for me to give up my addiction to kneading. I usually knead for a couple of minutes but this step is entirely optional.
  7. Dust the counter lightly with flour. Place the dough on the counter and lightly grease the top with shortening or oil. Cover with a clean dry cloth and allow the dough to rest for about 20 minutes.
  8. Shape the dough into 2 dozen equal sized balls. Watch the video for further instructions on shaping your rolls. Place the rolls, evenly spaced on a baking sheet lined with parchment paper. Lightly grease the top of the rolls with oil or shortening to prevent them with drying out. Cover the rolls with a dry towel and allow them to rise until double in size, approximately 20-60 minutes.
  9. Place the rolls in a pre-heated 375°F oven. Bake for 20 minutes on the center rack.
  10. Watch the video below for my “roll doneness test”. Optional – Lightly brush the top of the buns with butter. This will soften the top crust of the dinner rolls. Remove from the pan and place on a cooling rack.

  • 5 and 1/2 to 6 and 1/2 cups of All-purpose Flour
  • 2 tbsps of Quick-rise Instant Yeast
  • 1/4 cup of Shortening (replace with Oil or Butter if you prefer)
  • 1 Large Egg
  • 1/4 cup of Honey (replace with Sugar if you prefer)
  • 2 cups of Warm Water (100°F)
  • 1 tsp of Salt
  • Optional – Butter
