Nanaimo Bars are a favorite treat around our house. I usually only make them on special occasions such as Christmas or Easter, but they make a delicious treat any time of the year!

My Nanaimo Bars are a little bit different than the traditional. For a filling I use butter cream frosting instead of pudding or pastry cream, but you can give any of those a try. Here are my recipes for making each of those fillings:

Butter Cream Frosting
Pastry Cream

Directions (Bottom Crust):

Yield: One 8″ or 9″ square pan

  1. In a large saucepan, combine the following ingredients: 1/2 Cup of Butter or Margarine, 1 Large Egg, 1/4 Cup of Sugar, 1 teaspoon of Vanilla and 5 Tablespoons of Cocoa
  2. Cook over medium heat, stirring constantly, until thick and smooth.
  3. Remove from heat and stir in the following ingredients: 1 and 1/2 Cups of Graham Wafer Crumbs, 1 Cup of Coconut, 1 Cup of finely Chopped Nuts.
