Scalloped potatoes are a favorite in my house. Everyone loves them and why wouldn’t they? Potatoes are baked in a velouté with a little bit of cheese and seasonings… sounds absolutely delicious. The potatoes go great with a number of foods as a side dish and are even great as leftovers.

Directions:

Yield: 5-6 servings

  1. For this recipe we will be using a velouté, which is essentially a thickened stock. Make a roux by melting the butter over medium heat until it is bubbly. Add the flour slowly while blending with a whisk. Turn the heat down to avoid scorching the flour. Continue cooking the roux for another minute or so, to cook the starch out of it. This will get rid of that “flour” taste.
  2. Add the chicken stock to the roux. The stock should not be hot when you add it. Let the stock cook over medium heat until it thickens. Watch the video below for further instructions.
  3. To finish the velouté, while stirring, add 1 cup of heavy cream. Let that cook over low heat while you prepare your potatoes.
  4. After peeling your potatoes, cut them in half and place the flat side on your surface. Cut the potatoes further into thin slices.
  5. Lightly grease or spray a casserole dish.
  6. Place half of the sliced potatoes into the casserole dish. Top with parsley, salt and pepper.
  7. Add half of the onion and a thin layer of cheese over the top of the potatoes.
  8. Place the remaining potatoes in your casserole dish.
  9. Place the second half of the onion on top of the potato layer.
  10. Spoon the velouté from early over top of your potatoes.
  11. Add parsley, salt and pepper to taste.
  12. Cover and bake for 1 hour in a 350°F oven. The baking time will vary depending on your oven and the thickness of the potato slices. To check if the potatoes are done, pierce the potatoes with a fork. If the fork easily pierces the potatoes, they are cooked.
  13. Return to the oven uncovered for approximately 15-30 minutes to brown up the top of your scalloped potatoes. If you like cheese on top of your scalloped potatoes add it now.

  • 1/4 cup of All-purpose Flour
  • 2 cups of Chicken or Vegetable Stock
  • 1 cup of Heavy Whipping Cream
  • 5 large Potatoes
  • 1 medium Onion
  • Parsley, to taste
  • Salt, to taste
  • Pepper, to taste
  • Cheddar Cheese, to taste
