Festive Pound Cake is a great addition to your Christmas Celebrations. It’s very quick and easy to make and is absolutely delicious. Makes a great gift for that hard to shop for person and it is a great alternative to fruit cake.

Directions:

Yield: 2 x 10″ Loaves

  1. In a large bowl, cream together the sugar and butter with an electric hand mixer.
  2. Add the vanilla. Then add one egg at a time, blending after each addition. Blend until smooth and set aside.
  3. Combine the dry ingredients (flour, baking powder, salt, cherries and nuts) together in another bowl.
  4. Add the dry ingredients and sour milk to the creamed sugar and butter mixture alternately. Add one third of the dry ingredients and blend followed by one half of the sour milk. Continue until all ingredients have been mixed thoroughly.
  5. Divide the batter into two lightly greased loaf pans that have been dusted with flour. Smooth the top of the batter.
  6. Bake at 325°F for 1 hour to 1 hour and a half. When it is done, the cake will be golden brown and a toothpick will come out clean when inserted into the center. Cool completely on wire racks before slicing.

Ingredients:

  • 1 cup of Butter or Margarine
  • 2 cups of Granulated Sugar
  • 2 tsps of Vanilla
  • 4 Large Eggs
  • 4 and 1/2 cups of All-Purpose Flour
  • 4 tsps of Baking Powder
  • 1/2 tsp of Salt
  • 1 lb of Glazed Red Cherries, chopped
  • 1 lb of Glazed Green Cherries, chopped
  • 3/4 cup of Chopped Nuts, Raisins and Currants (optional in any combination)
  • 1 and 1/2 cups of Sour Milk
