Hot fudge pudding cake is one of my all time favorite desserts from my childhood!! Our mom used to make this for us on special occasions and I also made it for my kids while they were growing up. It’s so quick and easy and absolutely delicious!!! Serve it warm with a scoop of vanilla ice-cream… YUM!

Directions:

Yield: One 8″ pan (4-6 servings)

  1. Preheat oven to 350°F.
  2. Combine in mixing bowl and mix together the first 7 ingredients.
  3. Spread in the bottom of an 8 inch baking pan or casserole dish.
  4. Mix the 1/4 cup of cocoa with the 1 cup of brown sugar and sprinkle over top of the cake batter.
  5. Pour the boiling water over top.
  6. Bake on center rack of preheated 350°F oven for 45 minutes or until cake feels spongy and pudding is bubbling up.
  7. Cool on wire rack for at least 30 minutes before serving.
  8. Serve plain or topped with ice-cream.

Trust me, your kids will absolutely love this dessert, just like mine did. Enjoy!
