A Baked Alaska is a delicious alternative to store bought ice cream cakes. Cover a brick of ice cream with homemade pound cake and meringue and bake it in the oven. It is soooo fabulous and everyone will enjoy this at your next get together… not just the kids!

Directions:

Yield: One large cake

  1. Take your loaf of pound cake and slice into five even slices and set aside.
  2. To make the meringue, place the egg whites into a large bowl and whip on high speed. You can use a large stand mixer or a simple hand mixer.
  3. Once the egg whites start to get white and foamy, gradually pour in the sugar. Keep beating the egg whites while you add the sugar. Beat until you start to form peaks.
  4. Add the vanilla and continue beating until stiff peaks form.
  5. Remove the ice cream from the freezer and place on a sheet of wax paper. This will make it easier to handle.
  6. Prepare a baking sheet by lining it with parchment paper. Place one slice of the pound cake on the baking sheet to make the bottom layer of the Baked Alaska. Then place the brick of ice cream on top of this slice of pound cake. Continue covering the ice cream with pound cake until it is completely covered.
  7. Spread the meringue over the entire cake. This will make the final layer of the Baked Alaska. The meringue and pound cake act as insulation so that the ice cream doesn’t melt when it is placed in the oven.
  8. If you are feeling creative you can make designs in the meringue.
  9. Bake in the oven at 425° for 8-10 minutes on the second rack from the bottom.

It is ready to serve right out of the oven, so enjoy your Baked Alaska!

  • 8 Egg Whites
  • 1 cup of Sugar
  • 1 tsp of Vanilla
  • 1 brick of Ice Cream
