This is another variation on my bread recipe. It makes a delicious, hearty, healthy bread using whole wheat flour.

In the video, I mention the windowpane test for checking if you have kneaded your bread enough. You can see my demonstration video here.

Directions:

Yield: Two loaves

  1. Put three cups of whole wheat flour, shortening, sugar (or honey/molasses) and yeast in large mixing bowl. Blend together with wooden spoon.
  2. Add water and another cup of flour. Blend together.
  3. Add 1 cup of white flour and the salt. Blend together.
  4. Dump contents of bowl onto counter and continue to blend by hand and knead the dough adding flour (white) as required to prevent sticking.
  5. Knead dough for 8 – 10 minutes or until you have a nice smooth ball that is no longer sticky.
  6. Place in large bowl greased with shortening and cover with a clean towel. Place in a warm, draft free area to rise until double in size (approx. one and a half hours).
  7. Punch down and shape into loaves. Place in greased 8″ loaf pans, cover with clean towel and allow to rise in warm, draft free area for another hour, until double in size.
  8. Remove towel and place in preheated 400°F oven, center rack, for 30 minutes. Remove from oven and pans. Brush crust lightly with butter or margarine and cool on wire racks.

Ingredients:

  • 4 cups of Whole Wheat Flour
  • 1 to 2 and 1/2 cups of White All-purpose Flour
  • 1 tbsp of Fleishman’s Instant Quick Rise Yeast
  • 1/4 cup of Shortening, room temperature
  • 1/4 cup of Sugar, Honey or Molasses
  • 1 tsp of Salt
  • 2 cups of Hot Water (100°F)

    This is beautiful bread for sandwiches. Much heartier and more filling than the store bought bread. I haven’t bought bread for many, many years.

    Hi Alicia,
    Usually shortening can be substituted in most recipes, except the ones that are getting their flavour from the butter or margarine…like buttercream or other frostings. Yes you can use regular active dry yeast in any of my bread recipes. But you have to make sure that you soften it first… mix 1 tsp. of sugar with 1/2 cup of the warm water and then sprinkle the yeast over top. Allow to sit for about ten minutes. Stir and add to the flour with the rest of the warm water. Make sure you let the bread rise twice: Once in the bowl then after you shape the loaves.

    Can shortening be substituted in ALL of your recipes???
    And is it ok if the yeast is not quick rise? For instance, I have fleischmann’s active dry yeast which I believe is just the regular kind…
