BBQ season is here! Yay! Even those die hard meat lovers, will be ditching the beef for one of these awesome Portabella Mushroom Burgers!

These burgers are a delicious treat for the summer months and they are super quick and easy to cook on the grill. Fill the mushrooms with whatever you like or leave them empty and top with your favorite condiments as you would a hamburger. They’re great both ways!

Directions:

Yield: 8 burgers

  1. Remove stem and fins from the mushrooms using a spoon. Discard the fins. Chop the mushroom stems and set aside.
  2. Grill onion and pepper whole on the BBQ or slice and sauté with chopped mushroom stems.
  3. Brush the mushroom caps, inside and out, with vinaigrette or marinate for 30 minutes.
  4. Fill the mushroom with fresh spinach leaves, grilled onions and peppers and top with sliced or grated cheese.
  5. Place the filled mushroom, cap side down, on the grill over medium heat. Cook with lid closed for 2-5 minutes or until cheese is melted, spinach leaves are wilted and mushroom is cooked through.
  6. Serve on toasted buns with the condiments of your choice and enjoy!

Ingredients:

  • 8 large Portabella Mushrooms
  • 8 Crustini Buns (or your favorite type of bun)
  • 8 slices of Provolone Cheese (or your favorite cheese, sliced or grated)
  • 1 large Onion, sliced
  • 2 cups Fresh Baby Spinach Leaves
  • 1 large Red Pepper
  • Enough Greek Vinaigrette (or vinaigrette/marinade of your choice) to brush both sides of mushroom or marinate
